I OFFER YOU, YES, THE HUMBLE B.L.T., TO MY MIND THE GREATEST OF SANDWICHES, THE PERFECT GRILLED CHEESE SANDWICH COMING IN A CLOSE SECOND.  BUT THE BLT WITH ITS CONTRAST OF TEXTURES AND FLAVORS -- THE COMFORTING CRUNCH OF THICK TOASTED BREAD GIVING WAY TO MINERAL CRISPNESS OF LETTUCE, THE SALTY SMOKE OF THICK-CUT BACON, ALL ENVELOPED IN THE JUICY ACID SWEETNESS OF TOMATOES IS WITHOUT PEER.  THIS IS A SIMPLE THING TO MAKE AND AS WITH ALL SIMPLE DISHES THE QUALITY OF INGREDIENTS IS KEY.  SO MY TOAST IS PORRIDGE BREAD FROM TARTINE MANUFACTORY.  BACON IS APPLE-SMOKED FROM PEADS AND BARNETT. I USED GEM LETTUCE FROM THE GARDEN OF HO AND IN PLACE OF MAYONNAISE, AIOLI*.  YOU CAN CERTAINLY MAKE A DECENT BLT WITHOUT SOURCING FROM THESE PARTICULAR PURVEYORS, BUT IF YOU'RE LOOKING FOR THE GOLD STANDARD IN BLTs, THIS IS IT.
