TWO SUMMER SALADS

WHEN RIPE HEIRLOOM TOMATOES APPEAR IN THE FARMERS’ MARKET, I KNOW SUMMER HAS ARRIVED.  THEY ARE PERFECTLY DELICIOUS TOSSED WITH GOOD OLIVE OIL, SALT AND PEPPER, BASIL, PARSLEY, DILL, OR CHIVES.  BUT ALMOST AS EASY IS THIS ROQUEFORT AND OLIVE OIL DRESSING, WHICH WORKS EQUALLY WELL WITH RADICCHIO, BUTTER LETTUCE OR ENDIVE.

CUCUMBERS, YOGURT AND MINT IS AS CLASSIC AS GREECE.  OR TURKEY.  SOAKING THE CUCUMBERS FIRST IN SALT AND ICE WATER GIVES THEM A REFRESHING CRUNCH.  LOOK FOR WHOLE MILK YOGURT, SUCH AS STRAUS FAMILY CREAMERY.
