HEIRLOOM TOMATOES OF AS MANY VARIETIES AS YOU CAN FIND ARE CUT INTO CHUNKS, SCATTERED WITH FRESH HERBS, THEN SCALDED AT THE LAST MINUTE WITH HEATED OLIVE OIL, WHICH RELEASES THE FRAGRANT OILS IN THE HERBS AND BARELY WARMS THE TOMATOES.
