LITTLE GEMS AND GRILLED ONION SALAD

LITTLE GEMS ARE SMALL LETTUCES, COMPACT HYBRIDS OF ROMAINE, RED LEAF OR BUTTER LETTUCE. THEY HAVE A LOVELY, LEAFY TEXTURE AND A MILD MINERAL TASTE. YOU CAN ALWAYS SUBSTITUTE REGULAR ROMAINE, BUTTER OR A COMBINATION OF GREENS. THE ONIONS ARE GRILLED IN A PAN WITH OLIVE OIL AND DE-GLAZED JUST BEFORE SERVING WITH BANYULS VINEGAR, WHICH IS SUBTLER THAN SHERRY WINE VINEGAR AND MORE ASSERTIVE THAN CHAMPAGNE VINEGAR. BANYULS PLAYS OFF BEAUTIFULLY AGAINST THE SWEET, GRILLED ONIONS.
