HALIBUT ON RAITA

MY FRIEND BRIAN WENT FISHING OFF CATALINA AND BROUGHT HOME FRESH HALIBUT.  YOU DON’T WANT TO DO MUCH TO INTERFERE WITH THE SWEET OCEAN FLAVOR OF THIS FIRM-FLESHED WHITE FISH.  BUT HALIBUT IS A BIT BORING, SO I GRATED CUCUMBER AND RADISH AND MADE A RAITA WITH A LOT OF RAW GARLIC, WHICH COMES THROUGH NOT WITH A POWERFUL GARLIC TASTE, BUT HEAT.  IT’S A GREAT COMBINATION FOR A HOT SUMMER NIGHT.
