WHEREVER YOU LIVE, IT’S NOT SUMMER TILL THE FARMER’S MARKETS ARE BURSTING WITH RIPE PEACHES AND TOMATOES.  TOMATOES ARE ACTUALLY A FRUIT, BUT EVEN IF YOU INSIST ON THINKING OF THEM AS A VEGETABLE, THEY GO GREAT WITH PEACHES.  PARTICULARLY, HEIRLOOM TOMATOES.  TOSSED WITH A FRUITY OLIVE OIL, SCATTERED WITH FRESH HERBS, THEY MAKE A PERFECT BED FOR THE PILLOWY RICHNESS OF FRESH BURRATA.
