THESE FOUR DRESSINGS ARE THE ONES I USE MOST OFTEN. THEY RANGE FROM THE SIMPLEST OF COMBINATIONS (LEMON JUICE AND OLIVE OIL) TO THE MOST ASSERTIVE (BLUE CHEESE, RED ONION AND OLIVE OIL). YOU DON’T WANT YOUR DRESSING TO OVERPOWER THE SALAD GREENS. SO WHILE ARUGULA OR RADICCHIO MAY STAND UP TO CRUSHED GARLIC, SUBTLER LETTUCES SUCH AS BUTTER OR ROMAINE WILL NOT. MAKE SURE YOUR LETTUCES ARE WASHED AND THOROUGHLY DRY. TOSS JUST BEFORE SERVING. ONE OF MY FAVORITE SALADS, I DID NOT INCLUDE — ARUGULA, OLIVE OIL AND SHAVINGS OF PARMESAN CHEESE.
