LEAF LETTUCES WITH CHEVRE DRESSING

WHEN YOU APPROACH THE GARDEN OF CHU ON THE NW CORNER OF IVAR AND HOLLYWOOD BLVD IN THE SUNDAY FARMERS MARKET, YOU MIGHT THINK AT FIRST IT’S A FLOWER SHOP, SO METICULOUSLY DISPLAYED ARE THE LETTUCES.

 THERE ARE CURLY-LEAFED BIBB; PALE GREEN BOSTONS, SOME FLECKED RED AND PURPLE; COMPACT BUNDLES OF LITTLE GEMS, PLUS THE MOST PRISTINE BREAKFAST RADISHES, WILD ARUGULA, AND PLUMP BULBS OF FENNEL.  THE WHOLE STAND CRIES OUT, “SALAD!”  WITH THE EXCEPTION OF ARUGULA, THEIR TASTES VARY LESS THAN THEIR TEXTURES.  BLUE CHEESE IS ALMOST TOO OVERPOWERING FOR THEM, BUT CREAMY CHEVRE WITH ITS SUBTLE, CHALKY TANG IS THE PERFECT COMPLEMENT.  CHOOSE YOUR OLIVE OIL CAREFULLY, PERHAPS ONE OF THE FOUR VARIETALS SOLD BY WIEBE FARMS, ON THE WEST SIDE OF IVAR.    NOW ALL THAT’S MISSING IS A WARM LOAF OF FRENCH BREAD.
