CHICKEN CUBANO WITH SAFFRON RICE

IF YOU WANT TO SPICE UP A  ROAST CHICKEN, THIS IS A SIMPLE SOLUTION.  A FEW HOURS AHEAD, RUB THE CHICKEN WITH A COMBINATION OF CHILI POWDER, CUMIN AND CORIANDER.  WHILE IT ROASTS, BASTE WITH AN EQUAL MIXTURE OF FRESH LIME AND ORANGE JUICE AND TONS OF CRUSHED GARLIC.  SLICED RED ONIONS, MACERATED IN THE CITRUS JUICES, CAN EITHER ACCOMPANY THE CHICKEN OR BE ADDED TO A SALAD.  THE JUICE TAKES THE BITE FROM THE ONIONS WITHOUT DEPRIVING THEM OF CRUNCH AND ONION FLAVOR.  NOTE:  THIS MIGHT BE THE PERFECT ROAST CHICKEN TO TRY ON AN OUTDOOR GRILL.  PUSH THE FIRE TO ONE SIDE.  PLACE THE CHICKEN ON THE OTHER.  COVER AND ROAST.  SERVE THE ONIONS ON THE SIDE.
